I’ve been traveling a lot lately, and I have to admit: my go-to travel food has somehow become Starbucks egg bites.
In my mind, they’re the “better” option when I’m on the road and need something quick, warm, and protein-forward. But then you look at the ingredient list and realize just how many ingredients and additives can make their way into something as simple as… eggs and cheese. At that point I’m like, is this really that much better than grabbing a McDonald’s cheeseburger? 😂
And that is exactly where the inspiration for these homemade egg bites came from.
I wanted to make the version I wish I could find everywhere when I travel: creamy, fluffy, satisfying egg bites made with simple, real ingredients. Because seriously—why is that so hard to find?!
I made mine with red onion, jalapeño, cheddar, and half with feta and half with goat cheese, and they turned out SO good. The texture is incredibly close to the egg bites I’m always grabbing while traveling, but the flavor is obviously 10,000x better. And I know exactly what went into them.
The goat cheese version was my personal favorite—the creamy, tangy goat cheese with the little bit of heat from the jalapeño is perfection.
I also used parchment paper muffin liners, which made them ridiculously easy to pop out of the muffin tin and made cleanup basically nonexistent.
These are officially going into my regular meal-prep rotation. Now I just need someone to start selling this real-food version at every airport and rest stop in America.

Jalapeño, Red Onion & Cheese Egg Bites
Makes approximately 12 egg bites
Ingredients
- 8 large eggs (preferably corn & soy free)
- ½ cup cottage cheese or heavy cream
- ½ cup shredded cheddar cheese
- ¼ teaspoon salt, or to taste
- Freshly ground black pepper
- Dash of garlic powder
- Red onion, finely diced (eyeball as much or as little as you want - a little goes a long way)
- Fresh jalapeño, finely diced (eyeball as much or as little as you want - a little goes a long way)
- *optional - Feta cheese, crumbled
- *optional - Goat cheese, crumbled
- Parchment paper muffin liners
You don't need both feta and goat cheese in every egg bite. I divided mine and made some with feta and some with goat cheese. The goat cheese was my personal favorite.
Instructions
Preheat your oven to 300°F.
Line a 12-cup muffin tin with parchment paper muffin liners.
Blend the eggs, cottage cheese or cream, cheddar, salt, garlic powder and pepper together. Blend until completely smooth. Blending the cottage cheese or cream into the eggs is what gives these a softer, creamier texture rather than the firmer texture you typically get from baked eggs.
Divide the cheddar, finely diced red onion and jalapeño between the muffin cups.
Add crumbled feta to some and goat cheese to the others. You can also do a combination if you want to experiment with both.
Pour the blended egg mixture into each muffin cup, filling them about three-quarters of the way full.
Bake for approximately 25–30 minutes, or until the centers are just set. Try not to overbake them—the eggs will continue to cook slightly as they cool, and pulling them when they're just set helps keep them soft and fluffy.
Allow them to cool for about 5 minutes before eating.
Experiment with different combos
This is really more of a base recipe than something you need to follow perfectly. Once you have the egg mixture down, you can switch up the fillings depending on what you have on hand.

Bacon + Cheddar + Chives
Spinach + Feta + Roasted Red Pepper
Ham + Swiss
Mushroom + Gruyère
Broccoli + Cheddar
Jalapeño + Red Onion + Goat Cheese
My pick. The creamy, tangy goat cheese with the fresh jalapeño is such a good combination.
A Quick Tip About Vegetables
If you're adding vegetables with a higher water content—like mushrooms, spinach, or zucchini—I recommend cooking them first and squeezing or cooking off any excess moisture. This keeps the egg bites from becoming watery.
Red onion and jalapeño can go straight in, especially when they're finely diced.
How to Store Egg Bites
Let the egg bites cool completely before transferring them to an airtight container.
They'll keep in the refrigerator for about 4 days, making them an easy option to prep at the beginning of the week.
To reheat, pop one or two in the microwave for about 20–40 seconds, or warm them gently in the oven or toaster oven.
You can also freeze them for up to 2 months. I recommend freezing them individually first and then transferring them to a freezer-safe container so you can grab exactly how many you need.
