Simple Chicken Thigh Soup

My Go-To Gut Reset & “Back Home” Meal

This soup actually came together the day after we got back from a two-week trip to NYC. The fridge was basically empty, but we always keep a ton of frozen protein, and somehow the garlic, onion, and ginger survived being gone.

So I threw everything into a pot without overthinking it and it turned into one of those meals that reminds you how good simple food can be.

No complicated ingredients.
No long prep.
Just warm, nourishing soup that tastes incredible and lasts for days.

It’s now one of my favorite “reset” meals whenever I want something easy and genuinely comforting.

 

Ingredients

+ 4–6 corn & soy-free chicken thighs
(bone-in, skin on optional)

+ 1 small white onion, chopped

+ 5–6 cloves garlic, diced

+ 1–2 tbsp fresh ginger, diced

+ Salt & pepper

+ 2-3 bay leaves

+ 8–10 cups filtered water

 

Instructions

  1. Season the chicken thighs generously with salt and pepper.

  2. In a large stock pot, sear the chicken thighs on both sides until lightly browned.

  3. Add the chopped onion, garlic, and ginger to the pot.

  4. Pour in the filtered water.

  5. Add the bay leaves.

  6. Bring everything to a boil.

  7. Reduce heat and let the soup gently simmer for about one hour.

  8. Remove the chicken thighs from the pot and shred the meat.

  9. Return the shredded chicken back into the broth.

  10. Taste and add salt as you go, taste testing to make it however salty you want it. (I love a super salty broth)

Serve as is, or ladle over organic rice if you want something a little more filling.

 

Notes:

The flavor gets even better the next day.

Perfect for leftovers throughout the week.

One pot, minimal effort, maximum comfort.

 

This is one of those recipes that proves food doesn’t have to be complicated to be really good.

Sometimes the best meals come from working with what you already have.  A few simple ingredients, a big pot on the stove, and something warm simmering in the background while l settle back into my routine.

I make this anytime I want an easy reset meal that lasts for a few days and just makes the whole house feel cozy again.
